magic roster

In the last few NBA post-seasons there is inevitably a team ready to break out and establish themselves as a “legitimate” contenders by winning an upset or two and pushing further than they were projected. In the 2008 playoffs the New Orleans Hornets were the big story after a seemingly effortless dispatching of the Dallas Mavericks in round one and a game 7 showdown with the defending champion San Antonio Spurs, however in last year’s playoffs they only managed to squeak out a two point victory over the Denver Nuggets. In the 2007 playoffs the Cleveland Cavaliers took the world by storm on the steam of LeBron James and his 25 strait points in a double overtime win in Detroit to take the momentum and Conference finals victory to send the Cavs to their first ever NBA championship, in the following season they were hampered by the contract holdouts of Anderson Varejao and Sasha Pavlovic which severely crippled the team’s chemistry which as we all saw last season is how the Cavs make up for their lack evenly distributed talent.
In 2006 the Dallas Mavericks stormed their way through the Western conference all the way to the NBA finals where they fell short, but followed with a historical 67 win season and an even more historical first round playoff loss to the eighth seeded Golden State Warriors. Needless to say the spotlight in the NBA elite does not come without it’s pitfalls, one of which being the dread sophomore slump. Last year Denver and Orlando turned a lot of heads and definitely earned some stripes but can they meet the expectations that are now placed squarely on their backs? Or will they follow the model of the breakout team that just wasn’t ready for the spotlight?
A lesson in puberty;
The Denver Nuggets are what we used to refer to in high school as a, “late bloomer” you know when a kid comes back from summer senior year and he’s grown a foot and a half and is barely recognizable as the midget you and your buddies used to pick on? That’s Denver, a team that should have been able to defend itself against the bullies of the competitive western conference but instead could only muster up a total of four playoff wins in the past five NBA post seasons, that is until big brother Chancey Billups arrived in town to help stickup for the adolescent leader of the team Carmelo Anthony. Last season the Nuggets’ gelled at just the right time and started playing their best ball heading into the post season giving up two of their last eleven games and only two losses in the first two rounds of the post season. However, there were several factories playing into their near finals trip other than just their strong play in the post season, starting with their playoff seeding.
While they tied with the Spurs and Trail Blazers with 54 wins they slipped in front of the Spurs by one conference win, however with a healthy big three and they best fourth option ever on their team in Richard Jefferson I think it’s safe to say that #2 spot in the west is not a lock. In winning the #2 seed they avoided LA all the way to the finals and pounced on a dysfunctional New Orleans team (the previous year’s breakout) and a very exposed soft Dallas team in the second round along with a once in a lifetime shooting spree which resulted in NBa records of 58 point win over the Hornets and a 16 point average margin of victory through the first 10 games. Another emerging presence in the defense was Chris “Birdman” Andersen who was only on a one year “let’s see if you’re worth it” contract and over achieved finishing second in the league to Dwight Howard in blocks with 2.42 per game, despite a mere 20.5 minutes of playing time, resulting in a 5 year $26 million dollar contract. The Nuggets also lost significant role players Linas Kleiza and Dahntay Jones and gained Arron Afflalo in a trade from Detroit. While the Nuggets may struggle somewhat with the losses to their roster and a player without as much to prove and a much bigger contract their biggest challenge in living up to last year’s challenge will come from teams like San Antonio, Dallas, Portland, and even New Orleans all of which have made significant changes to their roster to help alleviate their primary scorers or help on in the inside (thanks to the Lakers gigantic front line). Simply put Denver’s got the attention of their peers and won’t have the luxury of sneaking up on unsuspecting opponents or a team trying to find it’s identity, and if they don’t finish at the #2 or #3 then they probably will face an early playoff rematch with the Lakers which barring any unforseen injuries or drama with new additions will lead to another June in Cabo.
A letter to Cinderella;
If you play professional basketball in central Florida it must be down right offensive to consistently see your team ranked behind a Boston squad without Kevin Garnett and a Cleveland team with only one real star, especially considering the distribution of talent on your team. I mean what else do you have to do? You’ve got three legitimate all-stars, the league leader in blocks and rebounds and incumbent star big man, oh yeah and you swept the season series 2-0 against the Lakers!! If that weren’t enough just to make it to the finals you had to dig yourselves out of a hole after dropping game 1 of the series against Philly, then you had to become one of only a handful of teams ever to win a game 7 IN BOSTON, and the small task of upsetting the #1 overall seeded Cleveland Cavaliers. I mean sure you had a couple of hiccups along the way (suspensions to Dwight Howard and Rafer Alston) but you came up with big plays and big wins when you needed them the most. It was merely a blessing in disguise when Mickael Pietrus went down to injuries and Courtney Lee was given his slot as a starter allowing the young player to blossom and giving you a guy who can come in a defend athletic players and drop huge three and making that “you can’t guard me” gesture like Kobe Bryant.
In the Cleveland series alone Pietrus outscored the entire Cavalier bench on his own, which says just as much about the Cavs bench as it does about Pietrus. You shot a staggering.381% from the arc throughout the playoffs, which in combination with you’re uber-ahtletic big man, un-stoppable pick and rolls, and size mismatches with Hedo Turkgolu (who as all contract year players probably was having the season of his career) and Rashard Lewis left your opponents dumb founded on the defensive end. The only real miscue from you guys came when it mattered the most, on the big stage. It’s really not your fault though, I mean no one really expected you to make it to this level anyways so it’s really a win-win right? That is unless you have a true leader who is turned off by losing, someone who has taken it as their personal responsibility to lead your squad to title, but you’ve got that right? Or do you? The real problem with your team is accountability, a sense of ownership and expectations to win. The Celtics have it, the Lakers have it, the Cavaliers have it, and the Spurs definitely have it. The expectation to win every year and the discomfort and agony that losing brings. Teams cannot ride the whole “Hey no one’s giving us a chance to win so let’s prove em’ wrong” thing all the way to the world title, not in this league at least.
That is the benefit and detriment of the 7 game series, that’s that it’s hard for Cinderella to show up night after night all the way through mid-June. Now I’m afraid the clock has struck mid-night and Hedo your many-a-time hero and big shot maker has left for greener pastures and it’s only a matter of time before bthe league finds out why. Although you should some solace in your Finals loss, I mean you did trade for Vinsanity Carter right?? But at what cost, your young budding star Courtney Lee or Rafer Alston? Now it appears your bench star of the 09′ playoffs Mickael Pietrus will return to the starting line up leaving a lack of firepower in the second unit. Oh but you scored Jason Williams so that’s got to account for something, even if his best ball is behind him and he hasn’t played on a real team since the 06′ Heat championsip team. The truth is even with the additions of Brandon Bass, Matt Barnes, and Jason Williams the loss of Turkgolu and Lee will undoubtedly change up the chemistry in the starting line up and leave your bench short of play making ability. As if that wasn’t enough that big green bully who wears #5 will and if you don’t see him then you’re probably going to see the big trophy hunter in Cleveland who’s gunning for this “MDE want to bee”. Life’s likely going to be a lot tougher this season/post-season. If I were you I’d go ahead and book those plane tickets for early June now while you can still get a good deal.
It’s not probable that the Magic will make a return to the NBA finals or even that the Denver nuggets will return to the conference finals. There’s a pretty good probability that they’ll go through some growing pains over the next season as wells as struggle with there new identity among the NBA’s elite, but the goods news is they’re for the most part young teams with a lot of time to learn and grow into champions but as they now know EVERYTHING has to go the right way to win it all. One could easily argue that if not for a steal in the final 30 seconds of game 1 in the WCF or if a couple shots rattled in during the two over-time losses in the NBA finals, history might be different for the Nuggets and Magic. There’s always next year, right?

basic crepe recipe

Crepes are thin pancakes, which are usually made from wheat flour. The word derives from the Latin word for curled. Crepes originate from a region in the northwest of France called Brittany but they are now popular all over the world, including in the Americas. Crepes are usually served with cider in Brittany and they can be filled with savory or sweet fillings. They can be used in many holiday recipes or served as a snack.
Popular savory crepe fillings include any combination of mushrooms, cheese, ham, spinach, asparagus, eggs, artichoke, meat, chicken, and ratatouille. Sweet crepes are served as desserts and these might contain sugar, melted chocolate, whipped cream, custard, sliced soft fruit, maple syrup, or lemon juice.
Crepe Suzette is a very famous French recipe. This is a crepe with Grand Marnier or a similar liqueur, as well as grated orange rind. Dessert crepes are usually rolled up and baked, sauteed or lightly fried. A lot of chefs like to wrap Beef Wellington in a crepe. This seals in moisture and prevents the pastry from becoming soggy.
Crepes Around the World
You can compare crepes to Indian dosa, African injera, or Mexican sope, which are all very similar. Crepes are often served at carnivals and fiestas in areas of Spain and they are sometimes made with pork blood instead of milk in the Spanish region of Galicia. Crepes are popular throughout Eastern Europe and they can be eaten with honey, quark cheese, sugar or fruit jelly.
Crepes are served at Candlemas in France, which is on February 2. There is a legend that if you catch a crepe in the skillet after tossing it in the air with your left hand, you would become rich that year, but only if you are holding a gold coin in your right hand while you do it!
Crepes are enjoyed with lemon juice and granulated sugar in the UK on Shrove Tuesday because they are a good way to use up milk, sugar, and eggs before the forty days of fasting during Lent.
Making Your Own Crepes
Crepes are best planned ahead because the batter should rest for one to twenty four hours before you use it. This lets the gluten relax and encourages the flour to soak up the liquid, which eliminates air bubbles. If you want to use the batter right away, make it in the blender and it will not have to rest.
The basic crepe recipe is half a cup of flour and half a cup of milk to one egg, as well as a pinch of salt. You can use a nonstick pan or a crepe pan but an expensive crepe pan is not essential. Coat the pan with a thin coat of oil or butter and then heat it over a moderately high heat. Use an offset spatula to distribute the fat, or tilt the pan.
Use a ladle to add a thin coat of crepe batter to the pan. The thinner the batter, the better the crepe will be, and you can help to make your crepes thin by tilting the pan as you add the batter. When the edges start to pull away from the pan, lift and flip it using your fingers.
The second side of the crepe will be ready in a few seconds. Transfer the crepe to wax paper and allow it to cool. Put a sheet of wax paper between each crepe you make, to stop them from sticking to one another. You can then serve the crepes or store them in a plastic bag in the freezer or refrigerator.

jenner sisters

Kim Kadashian is alternately described as a socialite, reality TV celebrity, debutante, and entrepreneur or sometimes called a celebutante (a debutante who is a celebrity). Whatever she is called, Kim is well known and undeniably beautiful. Although she has many television credits and movie appearances to her name she may be best known for her naughty tape with her boyfriend Ray J.
Kim Kardashian was born in Los Angeles on October 21, 1980 to defense attorney Robert Kardashian who is perhaps best known for his defense of OJ Simpson. Robert Kardashian was of Armenian descent and Kim Kardashian describes her childhood as filled with Armenian holidays, foods and stories. Kim’s mother is Kris Jenner nee Houghton. She has two sisters and one brother, Kourtney, Kloe, and Robert as well as a host of stepbrothers and sisters, Burton, Brandon, Brody and Casey Jenner and two half-sisters Kendall and Kylie Jenner.
While her parents were affluent they also believed in the work ethic and Kim Kardashian was on her own financially at the age of 18. This very possibly contributed to her entrepreneurial career since her family was determined their children would grow up to become independent and self-sustaining individuals.
Kim Kardashian is known in part for her boutique, and the series of designer fragrances and clothes launched bearing the Kardashian name and endorsement. Kim has appeared on Beyond the Break. She then starred the film spoof Disaster Movie. Kardashian appeared in a How I Met Your Mother episode and Kim and Kloe appeared on the tenth season premiere of 90210. However perhaps the most well known television credit for Kim is the reality TV show “Keeping up with the Kardashians” by E!.
While the life of the Kardashians portrayed on their reality show is hardly typical and keeping up with them might be beyond the means of the average viewer they have proved to be very popular. Most viewers can identify with the blended family as presented on this reality show and the beautiful Kardashian sisters attract more than a little attention and some envy.
E! published Kim Kardashian’s earnings and stated that the figure was near 5 million per year. Although being born into an affluent family can guarantee an income for some, Kim Kardashian has earned hers. While Kim has changed focuses several times she appears to be successful in her endeavors and even when as a production closes she is already moving onward to the next thing in her busy life.
In 2007 Kim Kardashian was December cover girl for Playboy magazine. Kim was the Spokeswoman for Bongo jeans although she was more voluptuous than the usual model for these designer jeans. Kim added to her credits by appearing on “Dancing with the Stars” but barely made it three weeks into the show before being eliminated.
Whatever Kim Kardashian decides to try next she is bound to gather media attention. Her real girl figure (translation is curvy) her determined attitude and of course the Kardashian skin have made this debutante and child of a famous lawyer, famous in her own right.

Whatever Michelle Obama wears in public is destined to become just as infamous as she is. You can tell when she steps out of the White House that she is completely comfortable and confident in what she is wearing. She may have been helped along by a professional stylist or two, but from the first day she hit the spotlight beside her now-President husband Barak Obama she stole the fashion limelight.
Michelle’s style is completely classy yet feminine in a subtle manner. You probably won’t catch her wearing pink lace very often, but you can find her wearing tops that seem to flow gracefully from her body with the perfect accessories to bring out her feminine whiles in a very classy manner.
What you won’t ever catch Michelle Obama wearing is anything that shows her butt cheeks or lets her breasts come out for a tan. She covers her body and dresses in a manner befitting the First Lady, but she also has a sense of elegance and classic style that every woman wants to imitate. She has shown the world that you can be womanly and sensual without being overtly sexual.
The Rise of Obama Fashion
Michelle Obama first splashed into the fashion headlines when her husband decided to run for president of the United States. She stood by his side at one event after the other, always elegantly poised and full of passionate words that conveyed a message of hope and positivity.

shenandoah lyrics]

As you may have read in my other articles about campfire singing, I tend to promote certain camp fire songs over and over again. It is true that there are several songs that seem to be campfire standards. In this article I would like to introduce you to some other camp fire song book gems. These campfire songs are ones that you may or may not be familiar with. They are excellent songs to include in your campfire singalong.

Home on the Range:

Home on the Range is often considered the anthem of the Old West. I picture a group of cowboys or pioneers sitting around a campfire singing this song. It would have had to happen after the 1870s, because that is when it was written. A doctor, Brewster M. Higley, wrote the words. It was originally a poem called “My Western Home.” It was first published in December of 1873 in Kansas under the title “Oh, Give Me a Home Where the Buffalo Roam.” Higley later had a friend named Dan Kelley write music to go with the words. The song became popular and was sung by cowboys, pioneers and just about everybody knew the song. In 1947 it became the official state song of Kansas.

When you sing this song, it brings into your mind a vision of what it must have been like in the old west; prairies of tall grass; deer, antelope, buffalo and other animals wandering; starry nights; clear blue skies during the day. Can you think of a more peaceful scene? When life gets hectic from work, family and other activities, this is a good simple song to sing to get away from it all, even if just for 30 seconds.

O Susannah:

I would consider this another traditional camp fire song. It was originally written by Stephen Foster. He wrote both the lyrics and the music in 1847. It became popular very fast. Just a couple of years later, when the Forty-Niners thronged to San Francisco, they picked it up and it became a kind of official song of the California gold rush. They sang the original lyrics, but they made up other verses of their own. One of the most popular alternate verses goes as follows:

I soon shall be in Frisco
and there I’ll look around.
And when I see the gold lumps there,
I’ll pick them off the ground.

I’ll scrape the mountains clean, my boys,
I’ll drain the rivers dry.
A pocketful of rocks bring home,
So, brothers don’t you cry.

This is a fun song to sing uptempo. It’s an easy song for guitar as well as banjo. I personally like the banjo on this song. Maybe it’s because it talks about the banjo in the song.

Old Dan Tucker:

This is an old minstrel song from the mid 1840s. Like most minstrel songs, it was originally supposed to be a boasting song about a rough and ready black man. It eventually was meant to portray a mythical wild frontiersman that tall tales could be told about. There are hundreds of verses about Old Dan Tucker; I have included just a couple in The Great American Camp Fire Song Book.

Let the Sun Shine Forever:

This song is not American at all, but Russian. It is very simple, with only 4 lines repeated over and over. When I have done it with children, I like to teach the Russian lyrics. The first 5 syllables of each line are exactly the same: Pust seg da bud yet, pronounced Poost seg dah bood yet. The last word of each line is as follows: 1)Son se, 2)Nye be, 3)Ma ma, 4) bood oh yah. On the fourth line replace bood yet with bood oh. I hope this makes sense to you.

I have heard this song done both fast and slow. I have also heard the melody used in a beautiful choral piece by Z. Randall Stroope. The piece is called Inscription of Hope. It’s about the hope that helped many survive during the holocaust.

Around a campfire, I would do the upbeat, fast version.

Shenandoah:

This probably originated as a river shanty in the original 1800s. It was popular first among sailors, and then spread from there, up and down the Missouri and Mississippi Rivers. We don’t know for sure what it’s original meaning was. Some say it was about a traveling man in love with an Indian chiefs daughter, telling the chief he intends to take her with him to the west. Others interpret it as a pioneer’s longing for his home in the Shenandoah River Valley of Virginia.

Whatever it’s original intent, it has a beautiful melody. Around a camp fire, it can be an effective song, if you want a subdued, soft mood. Otherwise, you probably should sing something else.

Sippin’ Cider Through a Straw:

I could not find any background information about this song. We don’t really know who wrote it or when. I have heard that the sipping straw was invented in 1813, so it was probably written after that. My guess is that it was written in 20th century.

Two things make this a fun and easy song. First, it’s fun to sing with a lisp. Second, it’s an echo song, so whoever is leading the song needs to know the words pretty good. That makes it easy for everyone else; all they have to do is echo.

I hope you have fun with these six camp fire songs. You can find them all in The Great American Camp Fire Song Book.

We constantly hear the stress on going green and developing alternative sources of energy not only for conserving energy but also for fighting global warming. Galloping world prices have also been responsible for increasing attention on finding renewable sources of energy.
As petrol prices have risen remarkably with expectations of further growth, non-economical renewable resources are expected to become economical. Hitherto many of them could not be developed because of prohibitive costs.
Solar energy is one of the most prominent alternative sources of energy. Many countries have been toying with the idea of its development. Unfortunately its share in overall energy sector is a measly 0.1 percent. According to statistics, solar power has recorded a growth of 22 per cent during the last 10 years, with 35 per cent having been recorded during the last 5 years alone. However, it must be remembered that we are talking about a small base on which these growth rates are calculated.
Prominent Solar Stocks
With the spectacular growth of solar energy, there have been rising expectations, reflecting extremely high valuations of solar stocks. First Solar has been having a valuation of more than 182. Everyone seems to be catching up for a share of solar companies. Most prominent solar companies which found favor with a large number of investors are:
o First Solar (FSLR)
o SunPower Corporation (STP)
o Suntech Power Holding Ltd. (LTP)
o JA Solar (JASO)
o Solar Enertech Corp (SOEN(
o Nano Solar
o Miasole
o China Sunergy (CSUN)
o LDK Solar (LDK)
o Solarfun (SOLF)
In addition to the above there are a large number of smaller players which are still under the development stage. Most of these are young companies. Take the case of First Solar. Even this company started only in Nov 2006.
On The Thresholds of High Tech Bubble
To many critics, investing in solar stocks is just like investing in high tech stocks towards the end of the last century only to burst. To them there is much hype associated with these stocks. The main reason for this impression is that it is extremely difficult to develop economical and viable solar energy. Costs associated with these are extremely high and therefore, it is very difficult to be profitable.
This is also confirmed with the behavior of equity prices. With all time highs, most of these stocks fell by as much as 50 per cent at one time. These are extremely volatile and may not be suitable for majority of investors.
It is also opined that there are many other high growth companies in which investors can put their incomes. There is no need to risk one’s money in these risky stocks.
Many solar stocks like Solarfun and First Solar rose several fold during 2007 alone. Because of the greed involved in stock markets, many investors tend to get attracted and ultimately lose their money.
Most of these companies are china based. We may not be sure of the final valuations of their businesses.
The Bright Side
However, all is not gloomy with solar stocks. Solar companies have billions of long term contacts, they have bright guidance, they are backed by their national governments and in some countries there is plenty of sunshine available, ready for exploitation.
Venture capitalists are pouring in huge amounts of money in this energy sub sector. Who knows some solar stocks may turn out to be gold mines.
Recommendation
Investment in solar companies seems to be very risky, though lucrative. Investors in these should pay attention to their PEO ratios. Another lucrative option can be solar ETFs. Moreover some companies like GE are spending heavily in solar power though as a fraction of their total investments. It might be advisable to invest in these companies instead for the sake of safety.

maize history of

The History behind Mexican Cooking
The Conquistadores on their arrival to the Aztec capital, Tenochtitlan (present day Mexico City) discovered that the diet of people comprised mainly of dishes made with corns, chilies and herbs, largely with tomatoes, beans or nopales. They mixed their own diet of rice, pork, beef, garlic and onions with the native food of pre Columbian Mexico which included maize, chocolate, vanilla, fruits such as guava, avocado and pineapple and some meats and local varieties of fish.
The traditional staple grain is corn but now, rice is as prominent and Mexico has a rice harvest in abundance. As per Karen Hursh Graber, a renowned food writer, the first introduction of rice from North Africa to Spain in the fourth century resulted in the influx of rice from Spain to Mexico from the Veracruz port in the early 16th century. Graber claims that this was among the first instances of fusion of the best cuisines of the world.
Some very exotic dishes are cooked in Aztec and Mayan style in villages. The ingredients come from rattlesnake, spider monkey, ant eggs and some other insects.
From Pre Columbian to Conquistadors
The Spanish explorers, led by Hernan Cortes, were attracted towards Mexico’s gold treasures. They not only conquered the country but brought back the food from the New World. This food then became staple diet for people across the world.
Bernal Diaz del Castillo, a compatriot of Cortes, recorded everything he experienced and this included details of the foods, battles and extreme conditions experienced by his compatriots. He recorded the history of Spain’s conquest of Aztec Mexico which was ruled by Montezuma. In between all this, Diaz also describes the opulence of food stores of Montezuma.
Cortes discovered that human flesh that had been offered as a sacrifice to Gods was an edible food in Mexico. Shocked by this ritual, he persuaded Montezuma to ban this practice.
Diaz noted that their diet was so rich that banning the ritual sacrifice would have been easy. Fowls, partridges, quail, ducks, rabbits and other small animals were cooked daily. Of course, there was the chocolate, in abundance. Cakes made of maize were properly brought out in plates with neat napkins. Diaz described the cakes as made with eggs and other healthy ingredients.
Diaz described maize plantations as omnipresent in New Spain. It was used in making dough known as masa from which came tamale and several other foods such as the tortilla. Maize was also popped and utilized in ornaments by young women during special occasions. In fact, maize was always in the focus of rituals. Diaz concluded that it was the basic of all Mexican food, although he did not deem it a cuisine.
Although conquistadors faced the Aztecs in Mexico, their diet was basically established in the Mayan civilization. Mayans used to worship corn and developed agricultural tools and procedures to grow corn.
Mayans were skillful farmers and could cultivate most of their staple food such as maize, beans, chilies, tomatoes and squash. Fruits and plants always grew in plentiful. Diaz especially mentioned prickly pear in his travelogues. Spirulina, an algae growing on water, was a major source of protein. A light alcoholic drink, Pulque, was made from the Maguey plant.
Beans were extremely vital to Mayans and other indigenous cultures and they used to plant corn and bean in the same hole, so that the bean could creep around the stalk of corn. Another type of bean, the scarlet runner bean, was grown in the central highlands of Guatemala and Mexico. Nowadays, people in Yucatan and Veracruz favor black beans while those in north favor pink ones.
Yet another important crop was the small amaranth seed which was raised in floating gardens by Aztecs. It is not very popular now as it was a part of cannibalistic ritual of Aztecs and the Spaniards did not favor it. Both maize and amaranth was used to prepare dough and dedicated to Gods. Several people used to eat pieces of dough, among them the humans who were to be sacrificed.
Tomatoes made their way from South America to Mexico while chilies in various varieties grew in plentiful. These are still the most vital ingredient in Mexican cooking and are used in sweetening or adding a punch to the dish.
Cortes reported seeing wild turkeys in the markets of Mexico City. In some Mayan excavations in the Yucatan and Guatemala region, bones from oscillated turkeys were found. These were found near the northern region of Mexico and are relatively smaller with peacock like spots. These were named pavo meaning pea hen by the Spanish.
While local ingredients provided them staple foods, it was the cooking procedures of the Mayans which provided them a healthy diet. They learned to cook corn with lime, steep it and remove the kernel. The lime released many nutrients from the corn which could be used by the human body. Even though they were not aware of vitamins, their cooking methods gave them a nutritious diet.
A look at the Spanish Foods Brought to Mexico
“We then ate a sumptuous dinner which they had prepared for us in their native style.” (Bernal Díaz del Castillo, The Conquest of New Spain)
The Spanish explorers introduced the Old World foods into the diet of the Indians. Maize was not replaced but the diet became richer. The Mexican cooking as we know today originated from this fusion of old and new ingredients.
Amongst the most vital introduction were domesticated animals. Pigs were the most popular ones as they were self fattening and easy to transport. These provided meat and lard which made the most sweeping change to the Indians’ diet. Mexicans never fried food until the introduction of pork.
After pigs, chicken, sheep, goats and cattle too assimilated and were grazed mainly in the central and north central regions. The traditional Mexican dishes that we see today appeared only after the conquistadors brought them.
The Spanish brought new grains such as wheat which gave rise to wheat tortillas. Sugarcane was brought from the Caribbean; Cortes himself had large areas of lands for growing sugarcane.
The Spanish took the Caribbean route to come to Mexico and this too influenced Mexican cooking. With Spanish flavors beginning to assimilate with the Indians’, the cuisine as we know today begin emerging. This was the comida novohispana. Frijoles, quesadillas and mole sauces emerged. The foods remained the same after independence of Mexico and the regional cuisines developed.
While the Spanish came as explorers, they transformed into conquistadors by forcing out the Aztecs. Hence, the Europeans dominated a civilization created by the early people. But how did the local foods survive? Probably, because of extreme poverty.
With extreme poverty, malnutrition and starvation normally follows. Mexico was always rich in nutritious foods. Even though the Spanish didn’t practice slavery, a caste system was created swiftly in Mexico. The pure Spanish occupied the top while in the bottom lay indigenous people. In this structure, each caste was represented by a food. For instance, wheat bread was preferred by the Spanish, while the corn stayed as the staple food. The wheat tortilla was cultivated in the northern region and thus affected cooking in the border areas.
Mexicans at that time generally lived on the streets. When they had to eat, they found that the native stuff was sold at cheap prices. Women travelled the streets and set up small fires to sell food. There were also grilling stands on every nook and corner. This was the Mexican food as it used to be cooked centuries before.
The elite class accepted these foods when dining with family but not outside. They considered these native foods as valuable, yet these should only be eaten in private.
When recipe books first came out in Mexico, they didn’t show any regard for native foods. Although these recipe books indicated that no one was consuming native food, most of the readers of such books were housewives. These ladies all had native cooks who were largely illiterate and learned their skills from older generations’ recipes. Hence, the native cook was making foods which the cookbooks disdained. The Mexican food thus survived.
The colonization by Spanish lasted several Viceroys and throughout the French reign of Maximillian and Carlotta. With the revolution of 1910, Mexico began proclaiming its native inheritance. The food created by the early natives now became the nation’s pride. While it can be called Mexican food, in reality, it deserves the word ‘cuisine’. It is subtle in nature and is among the world’s best cuisines.
The traditional staple grain is corn but now, rice is lampy as prominent and Mexico has a rice harvest in abundance.
